Ingredients

  • ½ cup fresh red bell peppers, diced
  • ½ cup raisins
  • 1½ cups cubed tofu
  • 2 cups water
  • 2 cups instant couscous
  • 1 tsp olive oil

Directions

  1. Sauté tofu, red peppers, and raisins together until soft.
  2. Bring the water to a boil, stir in the couscous, cover, remove from the heat, and let rest for 5 minutes until the water is absorbed. Fluff the couscous with a fork.
  3. Combine the tofu mixture with couscous and olive oil. Flavor to taste with curry or other mixed spices.
