Snickerdoodles — No Cream of Tartar
Soft, cinnamon-sugar-coated cookies made without cream of tartar, with lightly golden edges and baking powder for lift.

Adapted: Replaced 1 teaspoon baking soda and 2 teaspoons cream of tartar with 2 teaspoons baking powder. All other ingredients, method, times, and Yield: Unknown remain unchanged.
Ingredients
Dough
- 1 cup shortening
- 1 1/2 cups white sugar
- 2 eggs
- 2 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Cinnamon Sugar
- 2 tablespoons white sugar
- 2 teaspoons ground cinnamon
Directions
Prepare
- Heat the oven to 375°F (190°C).
- In a medium bowl, cream the shortening with 1 1/2 cups sugar until evenly combined. Mix in the eggs.
- Sift together the flour, baking powder, and salt. Stir the dry ingredients into the creamed mixture just until well blended.
- In a small bowl, combine the remaining 2 tablespoons sugar with the cinnamon.
Shape and Bake
- Roll the dough into walnut-sized balls. Coat each ball in cinnamon sugar, then arrange them on an ungreased cookie sheet about 2 inches apart.
- Bake for 8 to 10 minutes, until the edges are lightly browned.
- Transfer the cookies from the baking sheet to wire racks and let them cool for 5 minutes.
