Name: Tomato Pasta
Ingredients: 300 g (10 oz) large pasta spirals (dry); 2 tbsp extra-virgin olive oil, more if you like it; 2 large garlic cloves, crushed and finely chopped, more if you like it; 4 large ripe tomatoes, well-chopped, seeds and skin included (remove the seeds and skin if you like, but it isn't mandatory.); 1 handful of well-torn basil leaves; Salt, to taste; Pepper, to taste; 4 tbsp freshly, finely grated Parmesan-style cheese (Parmigiano Reggiano recommended!)
