Main ingredients

  • Yam, peeled

Egg sauce

  • Oil
  • Fresh tomatoes, diced
  • Fresh ata rodo chiles, diced
  • Onions, diced
  • Salt, to taste
  • Seasoning of your choice
  • Eggs (as many as you want)

Directions

Yam

  1. Cut the yam to your desired shape. Please note the shape for boiled and fried are different. Fried has a more light cutting compared to boiling.
  2. Either boil the yam in salted water until tender OR salt the yam and fry in groundnut oil until golden brown.

Egg sauce

  1. Heat a little oil in a saucepan.
  2. Add the diced tomatoes, chile, and onions. Fry for about 5 minutes until softened.
  3. Add salt and seasoning to taste.
  4. Crack eggs in a clean bowl, and whisk until smooth.
  5. Pour the eggs into the pan with the sauce. Cook, stirring, for about 2 minutes or until the egg is cooked.
  6. Serve the sauce with the yams.
