Liberian Collard Greens Stew

Ingredients
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tomato, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 teaspoon ground paprika
- ½ teaspoon ground cayenne pepper (optional, for heat)
- 1 bunch of fresh collard greens, washed and chopped
- Salt, to taste
- 2 cups vegetable broth (or water)
Directions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent and the garlic becomes fragrant.
- Stir in the diced tomato, red bell pepper, and green bell pepper. Cook for a few minutes until the vegetables are softened.
- Add the chopped collard greens to the pot and mix well with the sautéed vegetables.
- Season the stew with ground paprika, ground cayenne pepper (if using), and salt to taste. Stir to coat the collard greens and vegetables with the spices.
- Pour in the vegetable broth (or water) to the pot, ensuring that the collard greens are well covered.
- Cover the pot and let the stew simmer on low heat for about 30–40 minutes, or until the collard greens are tender and flavorful.
- Taste and adjust the seasoning if needed, adding more salt or spices according to your preference.
- Serve as a main dish with rice or bread, and enjoy.
