Ingredients

  • 3 cups dried beans, picked through
  • 8 cups water
  • ½ onion, peeled
  • 3 garlic cloves, peeled
  • Salt
  • Ham (optional), diced or chopped

Directions

  1. Soak the beans in water for 4–12 hours. Drain the water.
  2. Place the soaked beans, water, garlic, onion, and ham pieces in the Instant Pot.
  3. Seal the lid, close the valve, and set the "manual" button to 35 minutes.
  4. Use a natural pressure release or the quick pressure release (see how).
  5. When the valve drops, carefully remove the lid.
  6. Season with salt to taste.
  7. Serve or reuse in other recipes that employs beans.

Notes

The "manual" button and "pressure cook" button are the same and so interchangeably named for the different models.

The longer the beans soak, the less cooking time is required.

Be sure any beans containing the toxin phytohaemagglutinin (e.g. kidney beans) are thoroughly cooked to prevent toxicity.
