Ingredients

Scale
  • 2 tbsp honey
  • 4 tbsp all-purpose flour
  • ½ tsp baking powder
  • ½ tsp yeast
  • 1–2 tbsp freshly squeezed lemon juice (optional)
  • Lemon zest (optional)

Optional toppings

  • Whipped cream
  • Berries
  • Ice cream
  • Honey
  • Maple syrup

Directions

  1. Combine the flour, yeast, and baking powder in a bowl.
  2. Add honey, and mix until incorporated.
  3. Add a small amount of water, and until incorporated.
  4. Add lemon juice and zest, and mix until the batter is smooth.
  5. Pour the batter into a mug, and microwave for 60–90 seconds. To check if it's thoroughly cooked through, stick a toothpick in; if it comes out clean, it is ready.
  6. Serve with any of the optional toppings.

Notes

You can adjust the batter to your liking—no need to follow the measurements.

You do not need to microwave the batter in a mug—any microwave-safe container will do.

This recipe is easily adjustable, so feel free to add what you want to the batter.

You can add any topping you like.

Microwave it for longer if you think it is not thoroughly cooked or for shorter if you think it will be over-done.
