Ingredients

Scale
  • 4 large eggs
  • 250 g desiccated coconut
  • 200 g white sugar
  • 1 tsp vanilla extract
  • 2 tbsp water (optional)

Directions

  1. Preheat your oven to 180°C.
  2. Mix all ingredients together in a bowl.
  3. If your paste is too thick to pipe with a large piping tip, then add the water, and keep adding one tablespoon of water at a time until you get a consistency you can pipe. If your eggs are extra large, you may not need the extra water.
  4. Pipe dollops on a parchment-lined baking sheet.
  5. Bake in a medium to hot oven for 30 minutes or until done.
