- 1 stick (125 g/4.4 oz) butter
- ½ cup (110 g/3.9 oz) superfine sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2½ cups (350 g/12 oz) self-rising flour
Directions
- Preheat the oven to 180 °C (356 °F). Line 2 baking sheets.
- Melt the butter in a pan over a medium heat for 3–5 minutes until the surface is foamy.
- Leave it to cool for 5 minutes.
- Whisk in the sugar until dissolved.
- Leave it to cool for 10–15 minutes until lukewarm.
- Beat in the eggs and vanilla.
- Fold in the flour until combined.
- Roll the dough into 20 balls and place on the prepared baking sheets.
- Flatten the biscuits with a fork.
- Bake for 12–14 minutes until golden.
- Transfer the biscuits to a wire rack and leave it to cool.
