Why do cookies spread too much?
Cookie spread is rarely caused by one thing. Warm fat, warm dough, too little flour, a hot pan, extra grease, inaccurate oven temperature, and the balance of sugar or leavening can all move the result.
When troubleshooting, tell us whether the dough was chilled, how the flour was measured, what kind of fat and pan you used, and whether the first and last trays behaved differently.
What is your most common cause of a cookie turning into one large sheet?
